Four minimum witnesses

A Muslim is someone who follows God's mentioned five articles which are stated in the same verses one after the other, in fact He does so more than once so that we don't get it wrong, God goes on to emphasize it in another way, He forbids the denial of the same five articles of "belief" thus sealing the definition of a Muslim:

.........."To believe in Allah, and in the hereafter, and in Malaika(angels or Allah’s forces), and in the Book, and the Prophets." ......... Quran (2:177)

..........."Anyone who denies Allah, His Malaika, His books, His messengers, and the day of judgment has gone far far astray." Quran (4: 136)

We are not allowed to step outside of this exclusive list when it comes to Iman/belief (Faith). Period.

The point I am getting to is this; Everybody else must bring their proof: .....Say (to them), “Bring forth your proof, if you are truthful.” Quran 2:111

Now comes the fun part, God through Prophet Mohammad Pbuh gave us the Quran and embedded within the Quran are 100% verifiable proofs and "independent" tools of preservation of this message. Within this very Quran God has laid down the standard of proofs and conditions of accepting eyewitness testimony. God, in fact, is very clear on the issue of claims. Even for a social matter that rates several notches below theological and jurisprudence issue of ascribing reports to the Prophet of God, He has set standards. The standard is four witnesses (must be upright members of the community) are needed to back any claim of significance, irrespective of good intentions. And if you cannot produce the required four witnesses then you know what? You are a lier in God's own words. Imagine that.

Why did they not produce for it, four witnesses? And when they do not produce the witnesses, then it is they, in the sight of Allah , who are the liars. Quran 24:13

Note: There are limited social transactions where two witnesses will suffice but they are restricted to an everyday social situation, wills and already agreed upon financial transactions.
A very limited provision for a single person to act as a witness on an already agreed position is given when one is traveling and is unable to locate a scribe.

My humble advice to those who readily accept reports short of the Quranic standard as "Sahih" is to go back to whoever is teaching you our beautiful Deen and demand the Quranic standard, the same standard that gave us the following Hadith:

The Prophet of God said, "Whoever lies about me deliberately must prepare himself for a place in Hell-fire."
